Egg & Potato Breakfast Casserole
What we love most about this recipe is that you can be creative with it, mixing in other ingredients like herbs or cooked sausage. But most of all, we love using fresh potatoes-not frozen processed ones!
  • Servings: 12


  • (3 cups) Potatoes, freshly grated
  • (1/4 cup) Butter, grated or melted
  • (1/2 cup) Onion, finely chopped
  • (12 oz) Cheddar cheese, grated
  • (16 oz) Cottage Cheese
  • (1/2) Dozen Eggs
  • ((Opt): 1/2 lb) Pork Sausage


Set oven for 375 degrees F. Mix potatoes and butter and spread evenly on bottom of greased 9x13 pan. In a bowl mix together onion, cheese, cottage cheese, sausage and eggs. Add salt, pepper and preferred seasonings to taste. Pour egg mixture over potatoes and spread evenly with spatula. 

Bake 1 hour at 375 degrees F.
