Egg Drop Powerhouse Soup

This soup is another healing favorite of ours (adapted from “The Heal Your Gut Cookbook.”) This soup calls for fresh garlic and ginger, salt, broth, and egg. If you have the broth or stock on hand, it can be whipped up and ready to nourish in under 5 minutes. Hint: keep fresh ginger root in the freezer so it’s always on hand to pull out and grate frozen.
- Servings: 1
Ingredients
- (1-2 Cups) Meat Stock or Bone Broth
- (1 teaspoon) Ginger Root, Freshly Grated
- (1 clove) Garlic, crushed
- (1-2) Eggs
- Salt to taste
- (1/2) Green onion, chopped
Directions
Add 1-2 cups of meat stock or broth to a pot. Heat to boiling. Skim and discard the scum.
Turn off the heat and add:
1teaspoon of freshly grated ginger root
1 clove garlic, pressed
Whisk in 1-2 whole eggs (or just the egg yolk)
Add sea salt, to taste
Top with a bit of chopped green onion (optional)
